Fun and Easy Snowman Pancakes!

Happy New Year! I still can't believe it is already 2014. I'm excited to see what this year has in store for us :) I hope you all had a wonderful New Year too!

So with winter here, and no way to avoid it, I made some fun and easy Snowman Pancakes for Eliana! I was inspired by our Nemo The Snowman Sandwich from last year :) I made these pancakes for Eliana back in December, I decided to wait to share these because I knew baby was coming and I wouldn't have as many posts going out, AND we are in the middle of a blizzard today so it is quite fitting to share right now! :)

If you follow me on Instagram or Facebook, you will have known by now that baby Samantha has arrived!! She was born exactly a week before Christmas on December 18th! I am so thankful for her health and her life and she has been such a joy! We have been adjusting wonderfully with our newest addition, even with lack of sleep and sickness going around in our house lol :)

So-- back to the pancakes! David had made pancakes but there was a little bit of leftover mix, so instead of letting that go to waste I found a way to use it up!  To make these pancakes all you'll need is your favorite pancake batter (fully mixed so there are no bumps) and a squeeze bottle to draw on the skillet or griddle.

With your skillet, or griddle, on low heat draw the outline of your snowman.  Let your outline cook until it gets all nice and bubbly.  Then fill in each section of the snowman with the batter.  Once the snowman is almost fully cooked, gently flip your snowman so it can cook on the other side.

I used a green grape for the hat, mini chocolate chips for the eyes and buttons, apple slices for the nose, scarf and arms and a chocolate sprinkle for the mouth.  The "snow" is yogurt :) It was so simple to put together and Eliana loved it! I only did one and then let her decorate the others. I put all the ingredients in small bowls and let her assemble and decorate however she wanted. 

Who says you shouldn't play with your food? ;)

Rudolph Pancakes

Surprise your kiddos with these Rudolph Pancakes!

With Christmas right around the corner I made these simple Rudolph pancakes for Eliana! I was in a pancake making mood so I figured I'd make some fun shaped ones for her :)

These were really simple.  I took my homemade pancake mix and added cocoa powder to add some color and extra flavoring and they came out great!

To make these Rudolph Pancakes:

First mix up your pancake mix, homemade or boxed. (Mix it well so there are no bumps.)  I then added some cocoa powder (didn't measure) and I used that batter to make Rudolph's head.  His head is very simple-- just a circle.  You can use a squeeze bottle or just simply pour the batter onto your griddle.  I made a few pancakes with this batter before making the antlers.

To make the antlers darker I added more cocoa powder to the remaining batter.  This batter I put into a squeeze bottle and roughly drew out some antlers. To make the antlers you have to draw the outline on the skillet (on low heat) first.  Once your outline has cooked a little bit then you can fill in the rest of the shape with the pancake batter.  Once your entire pancake shape is almost fully cooked gently flip it so it can cook on the other side.

I used two mini chocolate chips and a Hershey-ets for the nose (peanut free and nut free!) and Rudolph was all set! Eliana LOVED him! 

...And now I have the Rudolph song stuck in my head now... and maybe you do too? You are so very welcome ;) I can't believe Christmas is in ONE WEEK!! :)

Elf Sandwich

I found one of Santa's elves in my kitchen! ;)

While I have no fascination, or desire to attempt, the whole Elf on a shelf thing; I do happen to think elves are cute (just not in creepy doll form ;)) I made this cute and simple elf sandwich for Eliana last week and she loved it! Your kiddos could easily make it themselves, it would be a fun Christmas treat!... or your elf on your shelf can make it for them :) I got inspiration from our Santa we made last year. I swapped out the red bell pepper for the green and made his hat look more like an elf's hat! :)

To make this elf I made a wowbutter sandwich (with Enjoy Life Foods mini chocolate chips inside) and cut it with my circle cookie cutter. I made his ears by using a heart cutter on some bread and then cutting it down the middle.  Half of a heart goes on either side to make his ears! I decorated his face with cheese hair, mini chocolate chip eyes and mouth.  Then I used a circle cutter and made him a green nose out of bell pepper.

To make his elf hat it was really simple--I used a green pepper.  Instead of trying to cut out a hat shape, I just used the natural shape of the vegetable and just cut down the ribs of the pepper.  I added some cheese decorations to make it look more like a hat, and that was it! Eliana loved him and ate him all up-- she only asked me to cut up the bell pepper after she finished everything else because she wanted to eat it sliced :)

Annoucement!

I have a wonderful announcement to make! 
And what better way to do that than through fun food?

This Christmas we'll have a special present under the tree. We'll be adding a new family member. Yes. You read that right.  I'm pregnant! I actually am well overdue with this message and kept meaning to post but I never got to it.. I mean only took me 38 weeks to mention it! Perhaps due to being so busy and possibly having more anxiety this time around I just never made things official here. But NOW it is official and there is no avoiding it! This baby GIRL is coming out SOON and we are all so excited to become a family of four! (well five if you count our puppy ;) Eliana is thrilled to be a big sister and I'm hoping her little sister decides to come out before Christmas and doesn't leave us all waiting ;)

To make this cute baby sandwich I just used my circle cookie cutter, mini chocolate chips and molded a tootsie roll for the cheeks and bow.  I used an edible food marker to make the mouth.  It was really that simple! :)

But basically this is why the posts have been more sparse.  My mind has been completely gone and I forget everything. So I'm sorry if I took longer to email you back, or call you back, or completely forgot altogether. It was not intentional, I promise :)  I will still be posting a few things and will have some guest posts after baby is born so I'll still be around, but won't be as present here on the blog the weeks after baby is born.  I'm looking forward to meeting her!! :)

Winter Themed Fun Food Ideas!

7 Winter Themed Fun Food Ideas!

With our first official snowfall today I decided to put my past winter fun food ideas together and share them again!  Thankfully we had less than a half of inch of snow with just icy rain and a wintery mix of things falling from the sky.  I do not enjoy winter or snow really, so I'm thankful we haven't had a lot of snowfall so far! The thing I do love about this time of season is the colors.  I love all the whites and blues and snowflake decorations... I just don't like the cold!

Frosty The Snowman:

In February this year we were slammed by blizzard Nemo and since we were stuck inside with at least 27 inches of snow (yes you read that right. yuck) I made Eliana this cute Nemo the Snowman Lunch :) See more details HERE.

Peppermint Snowflake Bark:

We made this fun dessert last year and it was so simple and easy to make! Simply melt your dark chocolate and your white chocolate with some crushed peppermint candy canes and extract! The mold does all the work for you.  See more details HERE.

Snowflake Cheese and Crackers:

This was a very simple snack I made for Eliana.  I used Snowflake Ritz Crackers and a snowflake cutter on some pieces of cheese.  See the details HERE.

Santa Belts

Santa Belts: A Simple Healthy Christmas themed snack!

There are LESS than three weeks til Christmas!  It seems so quick this year! I made this simple snack for Eliana yesterday and she loved them! They are so simple to make too :) And yes. I know the obvious. Santa's belt is black, but since Eliana and I don't like olives and I didn't want to color the cheese with food dye his belt became white :)

To make these Santa Belt Snacks you will need:
Round Crackers (I used Ritz Crackers)
White Cheese (I used Provolone)
Cheddar Cheese
Pepperoni
Small square cutter
circle cutter
A knife

1. Take all your ingredients and lay them out.
2. With your circle cutter cut as many pieces of cheese that you need.
3. with your square cutter cut an equal amount of cheddar cheese squares.
4. With a knife cut some strips of cheese for the belt.  (I just eyeballed it, no need to be perfect!)
5. Now you are ready to assemble your Santa Belt Snacks!

To assemble: You will start with the cracker on the bottom, followed by a layer of cheese. (I chose to cut this layer of cheese with a circle cutter, but you could easily just put any strip of cheese underneath.) Top the cheese with the pepperoni and then you can add the belt decorations.  Add the cheese belt and buckle and they are ready to be eaten! If you really want to "glue" the pieces for transportation you can do so with a dab of cream cheese.  Tip: These Santa Belt Snacks also taste yummy heated up! :)

And that's it! So simple and easy to make! :) 

p.s. I've also been notified that they resemble pokemon balls.... whatever works to get your little ones to eat a healthy snack! If they want pokemon fun food snacks-- then this works too! :)
