Easter Egg Hunt Lunch

An Easter Egg Hunt for lunch! A FUN food idea for Easter!
Lately, especially this past week (well and since Sammy was born lol), Eliana's school lunches have been on the plain side. Don't get me wrong-- I'm not upset at all about "plain" lunches! I'm happy to feed her fresh, healthy and good food for lunch every day :) However, both of us miss the special fun lunches I used to make more often.  So because today is Eliana's last day of school before break I decided to make her an extra special and fun lunch! 

And what could be more fun than an Easter egg hunt during lunch?! (well.. hopefully this goes well.. and is fun... if not-- I apologize in advance to the lunch monitors haha)

First I filled her yubo lunchbox with fake Easter basket grass. Then I took some plastic eggs (I washed and dried them) and filled them with food for her lunch. Inside she has a chocolate soy butter sandwich (cut with a FunBites square cutter so they fit inside the eggs), blackberries, goldfish, a cut up cheese stick, dried cranberries and some teddy graham crackers. I also used the yubo drink holder and attached her Thermos to the side of the lunchbox.  This is seriously the easiest lunch to put together!

You could fill your eggs with anything, but I would suggest to stay with dry smaller foods.  Other great fun food fillers would be pretzels, grapes, cherry tomatoes, raisins, any dried fruit, nuts (for those of you without nut allergies), baby carrots, celery sticks etc. I just wouldn't pack anything that could leak :) I would also make sure you thoroughly dry your washed fruits and veggies to make sure no water leaks through.
I believe I put 9 eggs in her lunch but there were room for more if you packed it tighter. If your child has a bigger appetite than my very talkative slow eater you could always do this for half of the lunch and then use one of the yubo containers to hold bigger food items :)

Eliana was SO excited to bring this lunch that on the way to school she told me she wished it was lunchtime NOW (at 8:00 am) so that she could eat it :)

Rice Krispies PEEPS and over 20 PEEPS ideas!

PEEPS PEEPS Glorious PEEPS! What says spring more than PEEPS? For me PEEPS is to Easter/Spring like Conversation Heart Candy is to Valentine's Day.

When Michelle of Sugar Swings! Serve Some and Christi of Love from the Oven asked if I wanted to join in on a celebration of PEEPS with a blog hop and a giveaway I was so excited!!! Plus it is the 60th anniversary of PEEPS! 

So to celebrate I went straight to BJ's and bought a ginormous pack of PEEPS. 
 But what to do with all these PEEPS?! Seriously. There were over 40 PEEPS in that package. So I finally came up with the idea to make Rice Krispies PEEPS! I felt like a genius! Before weighing them all out to try to figure out how many would be necessary to replace regular marshmallows I did some searching online-- because I figured I couldn't have been the first genius with this idea. And I wasn't ;) I found this recipe on Serious Eats and decided to try it out!

Rice Krispies PEEPS:
Ingredients:
3 TBSP butter
6 cups Rice Krispies Cereal

Directions:
1. In a large pot melt butter over low heat.

2. Take the PEEPS and put them in your saucepan. Continue to stir and let them melt. Don't mix the colors until you add the Rice Krispies, but do move the PEEPS around so they don't burn/stick to the bottom of the pan. Remove pot from heat once PEEPS are all melted. (I kind of jiggled them around in their own section to keep them from sticking to the pan)

3. Add Rice Krispies cereal and stir until well coated.

4. Press mixture into desired pan coated with cooking spray (I used a 13x9 inch pan)

5. Cool completely before cutting.
So I separated my PEEPS like this when melting. I kept them in their own section without mixing the colors before adding the Rice Krispies. The package of PEEPS I got from BJ's only came with these three colors, but you could use any colors you want! However I would keep it to only three colors of PEEPS. When I was mixing the Rice Krispies in I was very careful because I didn't want to get any brownish colors from overmixing (which did happen in a few areas).

What you'll get is something that looks like this:
Aren't they pretty!? I loved the mix of colors! And they look nothing like the bright neon colors of the PEEPS. My brother had thought I used Fruity Pebbles!
And look who's PEEPing behind these yummy treats! ;)
These were seriously SO easy to make and Eliana loved helping me make them!

Easter Bunny Lunch and over 20 Creative Easter Food and Craft Ideas!

With Easter right around the corner, and seemingly so early this year I am honored to be a part of this round up of creative Easter food and craft ideas! Be sure to check them all out at the end of this post!

For this round up I made an Easter Bunny Lunch for Eliana and she loved it! I took inspiration from my Groundhog Day Lunch and made a cute bunny popping out of a hole (bread crust) :)

I made this Easter bunny using my nesting circle cookie cutters. The Easter bunny is a Wowbutter sandwich (with mini chocolate chips sprinkled inside as a nice surprise) cut with the largest circle cutter. Its ears are sliced banana and its eyes are mini chocolate chips on cheese cut with a circle cutter. The nose is fruit leather and his whiskers are spaghetti noodles.  Since bunnies eat carrots and celery those were the vegetables we chose to put in this lunch :) 

And what Easter Bunny is complete without an Easter egg? You can easily make an Easter egg with some cheese, a cookie cutter, and decorate it with fruit leather.

So that is it! An easy to make healthy and creative Easter Bunny Sandwich for Lunch! :) Eliana loved it and nibbled it all up... just like a bunny ;)
