World Turtle Day Lunch

Today is World Turtle Day!! So why not celebrate it with a fun lunch? :)

This was Eliana's lunch today! She loved it and gobbled it all up :) I used my turtle cupcake silicone cups (I got them from Christmas Tree Shops) and made her a quick and easy lunch/muffin tin meal (food served in muffin tins, or silicone cups). In one of the cups she got sliced grapes, since I tried to resemble a turtle shell.. I'm not sure if I succeeded.. but she liked it! In another she had sliced cumbers and in the last she had rolled ham and cheese. Since these turtles are in the water I had some cucumber "seaweed" and some goldfish fishies swimming around.

Today also had me remembering this lunch I forgot to blog about! Eliana had gotten a new Melissa and Doug Turtle Snack Container from her buelo and buela last year and have loved using it! And of course its a Turtle -- so perfect for today! :)
Isn't it adorable? It is the perfect size for a snack and it actually works great for a smaller lunch too! It works out perfect for Eliana since she doesn't always eat a big lunch.  She also can take off the cover easily all by herself.
And yes I used green grapes and cucumber in a turtle lunch again... I'm seeing a theme here! :) Inside the container are three compartments; two smaller ones and one larger one. We packed sliced cucumbers, green grapes and I.M. Healthy Chocolate Soy Nut Butter and cracker sandwiches.  This was a really quick and easy lunch to put together and Eliana loved it :) We've actually made plenty of snacks in this container the past year but I don't think I've taken many pictures of them so I'm glad I found this picture for today! :)

A Bug's Life Lunch Part Three

This is Part Three of A Bug's Life Lunch: Muffin Tin Meal Style :)

A Muffin Tin Meal is a meal served in muffin tins, and in this case frog muffin cups.  I found these cute frog silicone baking cups at Christmas Tree Shops.  ((Please see more amazingness about Muffin Tin Meals at Muffin Tin Mom!))

This was a super easy way to this simple meal even cuter :)  Continuing through our box of Crazy Bugs Macaroni & Cheese I decided to make a Bug themed muffin tin meal. Frogs eat bugs.. so why not make a Froggy Bug themed Muffin Tin Meal?! :)

In the upper left Froggy: we have our Crazy Bugs Macaroni & Cheese

In the upper right Froggy: cut green seedless grapes

In the lower left Froggy: thinly sliced celery underneath some "ants" on a log ("glued" with Creamy Honey Soynut Butter) If you prefer "flies" on a log you could add some sunflower kernels for wings (see example here). I was out of nut free/peanut free sunflower kernels so we went with ants on a log instead :)

In the lower right Froggy: Honey Cinnamon baked Chickpeas (we take a can of organic chickpeas, rinse and drain well. Dry them out on a paper towel. Put chickpeas on a parchment paper lined cookie sheet and bake until crispy. Toss the hot chickpeas with honey and cinnamon. Then put back into the oven for about 10 min. No real measurements of ingredients or time-- super simple and easy to do though! We have made other flavors too. It is a favorite snack of mine and Eliana's! We make a batch every other week about :))

Flower Soup

Eliana has been sick since last Saturday...needless to say we have been exhausted over here..  Sleepless nights, interrupted sleep, runny nose, cough along with a side of being irritable and not wanting to eat.  It is never fun when your little one comes down with a cold.  I'm so thankful Eliana likes soup! Since she hasn't been eating as well soup is great way to get some good nutrition in.  However having soup every day for lunch can get boring.. so I decided to present today's soup in a creative way: as a muffin tin meal!
Flower Soup
Eliana actually asked for soup and cracker refills and told me she likes her soup better in the flowers than in bowls! This was a very simple lunch, but very creative! 


I put her chicken noodle soup in two flower silicone cups  [use homemade soup or canned...  if you happen to be running on a week of not-so-good sleep I would go with canned ;) ]


I then put crackers in the last flower silicone cup.  I also cut some green peppers for some "leaves".

Easy as pie. Or soup.
